Day 2: something you ate today.
I have been trying to make better food choices lately and found a recipe on Pinterest that I wanted to try. I LOVE chicken salad! It's not that great for you because of all the mayo on it. This is a healthy alternative.
2 boiled chicken breasts
1 whole avacado
Juice of half a lime
Onion
Cilantro
Salt and pepper
Just boil the chicken, let it cool and shred it. Then mix all ingredients together!
I use a lot of onion because I love them also. I could probably just eat a whole onion raw everyday if it didn't give me funky breath!
Put all this on a roll or bread and it is quite tasty! I made this on Sunday and am planning on eating it for lunch most days this week. It makes quite a bit.
By the way the best chicken salad (made with mayo) is from Village Baker. Makes my mouth water just thinking of it. Mmmm
